Za'atar Mana'esh
Soft Levantine flatbread topped with olive oil and WAHA! Jordanian Za'atar — warm, herbaceous and perfect for breakfast or mezze.

Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon instant yeast
- 1 teaspoon sugar
- ¾ teaspoon kosher salt
- ¾ cup warm water
- 2 tablespoons extra-virgin olive oil, plus more for topping
- 6 tablespoons WAHA! Jordanian Za'atar
- ¼ cup extra-virgin olive oil, for the za'atar paste
- 1 teaspoon sumac (optional, for extra tang)
Instructions
- In a large bowl, whisk flour, yeast, sugar and salt. Add warm water and 2 tablespoons olive oil, then mix until a shaggy dough forms.
- Knead on a lightly floured surface for 8–10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise 1 hour or until doubled.
- Preheat oven to 450°F (230°C) with a baking sheet or pizza stone inside.
- Mix WAHA! Jordanian Za'atar with ¼ cup olive oil and sumac to form a loose, fragrant paste.
- Divide dough into 4 equal pieces and roll each into a thin oval or circle, about ¼ inch thick.
- Transfer dough rounds to parchment paper. Press a thumb-wide indent in the center of each and fill with za'atar paste, spreading to the edges.
- Bake 8–10 minutes until the edges are golden and the topping is sizzling.
- Serve warm with labneh, cucumber slices, tomatoes and olives.
