Beef Shawarma
Thin-sliced beef marinated in olive oil, red wine vinegar, garlic and WAHA! Beef Shawarma Spice Mix, then seared until crispy-edged. Pile it high in a wrap or over rice.

Ingredients
- 1.5 lb beef sirloin or flank steak, sliced very thin
- ¼ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 3 garlic cloves, minced
- 1 tablespoon lemon juice
- 3 tablespoons WAHA! Beef Shawarma Spice Mix
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- To serve: warm pita, pickled turnips, cucumber-tomato salad, tahini or toum
Instructions
- In a large bowl, whisk together olive oil, vinegar, garlic, lemon juice and WAHA! Beef Shawarma Spice Mix.
- Add the thinly sliced beef and massage the marinade into every piece. Marinate 1 hour, or up to overnight.
- Heat a large cast-iron skillet or griddle over high heat until smoking hot. Work in batches so the meat sears, not steams.
- Sear beef 2–3 minutes per batch, letting edges crisp and char. Transfer to a plate.
- Taste and adjust seasoning with a little extra salt or lemon if needed.
- Serve stuffed in pita with pickles, salad and a drizzle of tahini or toum.
