Beef Shawarma

Thin-sliced beef marinated in olive oil, red wine vinegar, garlic and WAHA! Beef Shawarma Spice Mix, then seared until crispy-edged. Pile it high in a wrap or over rice.

Ingredients

  • 1.5 lb beef sirloin or flank steak, sliced very thin
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 3 tablespoons WAHA! Beef Shawarma Spice Mix
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • To serve: warm pita, pickled turnips, cucumber-tomato salad, tahini or toum

Instructions

  1. In a large bowl, whisk together olive oil, vinegar, garlic, lemon juice and WAHA! Beef Shawarma Spice Mix.
  2. Add the thinly sliced beef and massage the marinade into every piece. Marinate 1 hour, or up to overnight.
  3. Heat a large cast-iron skillet or griddle over high heat until smoking hot. Work in batches so the meat sears, not steams.
  4. Sear beef 2–3 minutes per batch, letting edges crisp and char. Transfer to a plate.
  5. Taste and adjust seasoning with a little extra salt or lemon if needed.
  6. Serve stuffed in pita with pickles, salad and a drizzle of tahini or toum.
